Ingredients
  

  • 1 box lemon cake mix
  • 1 cup Sun Drop soda
  • 1 bag lemon instant pudding mix
  • 1 cup confectioners' sugar
  • 1 teaspoon lemon extract
  • 1 tablespoon butter melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 1 pinch salt
  • 1/2 cup heavy cream

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Grease your baking pan with butter or cooking spray.
  3. In a large mixing bowl, combine the lemon cake mix, lemon pudding mix, and a pinch of salt. Whisk together until well blended.
  4. Pour in the Sun Drop soda, melted butter, lemon extract, vanilla extract, and almond extract. Mix until just combined.
  5. Gently fold in the heavy cream until smooth and creamy.
  6. Pour the batter into the prepared baking pan.
  7. Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cake cool in the pan for about 10 minutes, then transfer to a cooling rack.
  9. After cooling, drizzle with a glaze made from confectioners' sugar and lemon juice.

Notes

  • Mix in some lemon zest for added flavor.
  • Reduce confectioners' sugar for a less sweet glaze.
