- Start by sprinkling the powdered gelatin over 2 tablespoons of cold water in a small bowl. Allow it to bloom for about 5 minutes.
- In a medium saucepan, combine the heavy cream, sugar, honey, and the cinnamon stick. Heat the mixture over medium heat until it’s just about to simmer. Stir occasionally to dissolve the sugar completely.
- Once the cream mixture is hot, remove it from the heat and whisk in the bloomed gelatin until fully dissolved.
- Add the rosewater to the mixture and give it a gentle stir.
- Pour the mixture into serving cups or molds, leaving a little space at the top for any toppings you might want to add later. Let them cool at room temperature for about 30 minutes before transferring them to the refrigerator. Chill for at least 4 hours or until set.
- Once the panna cotta has set, gently run a knife around the edge of the cups if you are planning to unmold them. Serve topped with fresh berries, a drizzle of honey, and a sprinkle of chopped crunchy treat if desired.
