- Step 1: Preheat Your OvenBegin by preheating your oven to 350°F (175°C). This ensures that your bread bakes evenly and rises beautifully.
- Step 2: Prepare the Loaf PanGrease your loaf pan with a bit of oil or cooking spray to prevent sticking. You can also line the bottom with parchment paper for easy removal.
- Step 3: Blend the IngredientsIn your high-powered blender, combine the packed brown sugar, ground cinnamon, old-fashioned oats, creamy peanut butter, ripe bananas, eggs, Greek yogurt or sour cream, packed brown sugar, pure vanilla extract, baking powder, baking soda, and salt. Blend until the mixture is smooth and creamy.
- Step 4: Transfer to the Loaf PanPour the blended batter into the prepared loaf pan, using a spatula to scrape every last bit from the blender.
- Step 5: BakePlace the loaf pan in the preheated oven and bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean. The top should be golden brown and slightly domed.
- Step 6: Cool and SliceOnce baked, remove the bread from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely. Slice and enjoy!
Notes
- Store the bread in an airtight container at room temperature for up to 3 days.
- For longer storage, wrap it tightly and refrigerate for up to a week.
