Ingredients

Ingredients
  • 3 tablespoons packed brown sugar
  • 1 teaspoon ground cinnamon
  • 2 cups old-fashioned oats
  • 1 cup creamy peanut butter
  • 2 medium bananas (the more ripe, the sweeter the bread)
  • 2 large eggs
  • 1 cup Greek yogurt OR sour cream
  • 6 tablespoons packed brown sugar
  • 1 teaspoon pure vanilla extract
  • 1.25 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Equipment

  • High-Powered Blender
  • Loaf pan
  • Measuring cups and spoons
  • Spatula
  • Oven mitts

Method

Directions
  1. Step 1: Preheat Your Oven
Begin by preheating your oven to 350°F (175°C). This ensures that your bread bakes evenly and rises beautifully.
  2. Step 2: Prepare the Loaf Pan
Grease your loaf pan with a bit of oil or cooking spray to prevent sticking. You can also line the bottom with parchment paper for easy removal.
  3. Step 3: Blend the Ingredients
In your high-powered blender, combine the packed brown sugar, ground cinnamon, old-fashioned oats, creamy peanut butter, ripe bananas, eggs, Greek yogurt or sour cream, packed brown sugar, pure vanilla extract, baking powder, baking soda, and salt. Blend until the mixture is smooth and creamy.
  4. Step 4: Transfer to the Loaf Pan
Pour the blended batter into the prepared loaf pan, using a spatula to scrape every last bit from the blender.
  5. Step 5: Bake
Place the loaf pan in the preheated oven and bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean. The top should be golden brown and slightly domed.
  6. Step 6: Cool and Slice
Once baked, remove the bread from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely. Slice and enjoy!

Notes

  • Store the bread in an airtight container at room temperature for up to 3 days.
  • For longer storage, wrap it tightly and refrigerate for up to a week.
  • Freeze slices for up to 3 months and thaw at room temperature or toast.
