Ingredients
  

For the Doughnuts:
  • 1/2 cup whole milk
  • 1/2 cup smooth peanut butter
  • 2 teaspoons active dry yeast
  • 1/4 cup warm water
  • 2-1/2 cups all-purpose flour
  • 1/2 teaspoon kosher salt
  • 1/4 cup sugar
  • 1 large egg beaten
  • Vegetable oil for frying
  • 3/4 cup seedless blackberry jelly stirred
  • Powdered sugar for topping

Method
 

Instructions:
  1. Step 1: Activate the Yeast - In a small bowl, combine the warm water with the active dry yeast and a pinch of sugar. Let it sit for about 5 minutes until it becomes frothy.
  2. Step 2: Prepare the Dough - In a large mixing bowl, whisk together the flour, sugar, and kosher salt. In another bowl, combine the whole milk, smooth peanut butter, and the beaten egg. Mix until well combined.
  3. Step 3: Combine Wet and Dry Ingredients - Gradually add the wet mixture to the dry ingredients, stirring until a dough forms.
  4. Step 4: Knead the Dough - Turn the dough out onto a lightly floured surface and knead for about 5-7 minutes until it is smooth and elastic.
  5. Step 5: Shape the Doughnuts - Roll it out to about 1/2-inch thickness on a floured surface and cut out your doughnuts.
  6. Step 6: Second Rise - Place the cut-out doughnuts on a floured baking sheet. Cover them with a towel and let them rise again for about 30 minutes.
  7. Step 7: Fry the Doughnuts - In a deep frying pan or fryer, heat vegetable oil to 350°F (175°C). Carefully lower the doughnuts into the hot oil, frying for about 2-3 minutes on each side.
  8. Step 8: Fill the Doughnuts - Once the doughnuts are cool, fill each with the seedless blackberry jelly.
  9. Step 9: Finish with Sugar - Dust the filled doughnuts with powdered sugar before serving.
