Mastering Pastitsio (Greek Lasagna): How-To
- Step 1: Prepare the Pasta - Start by boiling a large pot of salted water. Add the ziti pasta and cook until al dente according to the package instructions. Drain and set aside.
- Step 2: Make the Meat Sauce - In a large skillet, melt 4 tablespoons of unsalted butter over medium heat. Add the chopped onions and sauté until they are translucent. Next, add the ground beef, breaking it apart with a spatula as it cooks. Once the beef is browned, season with ground cinnamon, salt, and pepper. - Step 4: Combine Pasta and Eggs - In a mixing bowl, combine the cooked ziti with 3 beaten eggs and 1 teaspoon of salt. Mix well to ensure the pasta is evenly coated.
- Step 5: Assemble the Pastitsio - Preheat the oven to 350°F (175°C). In a greased baking dish, spread half of the pasta mixture as the first layer. Next, layer the meat sauce evenly over the pasta. Follow this with the remaining pasta mixture. Finally, pour the béchamel sauce over the top and sprinkle the grated cheese.
- Step 6: Bake - Transfer the baking dish to the preheated oven and bake for 45-50 minutes, or until the top is golden and bubbly. Allow it to cool for about 15 minutes before slicing into squares.
