Ingredients

For the Sandwich:
  • 2 slices ciabatta or French bread
  • 1 tablespoon softened butter for brushing the bread
  • 2 slices mozzarella cheese
  • 2 tablespoons basil pesto
  • 1/3 cup finely shredded Parmesan cheese (use Microplane)

Equipment

  • Non-stick skillet
  • Spatula
  • Microplane grater
  • Butter knife

Method

Instructions
  1. Start by taking your ciabatta or French bread. Using a butter knife, spread the softened butter on one side of each slice. This will help create that golden, crispy crust we all love.
  2. On the unbuttered side of one slice, spread 2 tablespoons of basil pesto evenly. This is where the magic begins as the flavors start to meld together.
  3. Next, place 2 slices of mozzarella cheese over the pesto. The mozzarella will melt beautifully and create a delicious, gooey interior.
  4. Sprinkle 1/3 cup of finely shredded Parmesan cheese over the mozzarella. This will form the crispy crust that makes this sandwich so special.
  5. Place the other slice of bread on top, buttered side facing out. Press down gently to help everything adhere as it cooks.
  6. Heat a non-stick skillet over medium heat. Once hot, carefully place the sandwich in the skillet. Cook for about 3-4 minutes or until the bottom is golden brown. Use a spatula to flip the sandwich, and cook for an additional 3-4 minutes on the other side until the cheese is melted and both sides are crispy.
  7. Remove the sandwich from the skillet, let it cool for a minute, then slice it in half. Serve it warm and enjoy the delightful combination of flavors and textures in your Parmesan Crusted Pesto Grilled Cheese Sandwich.
