Ingredients
  

For the Steak:
  • 2 12 ounces New York steaks well-marbled
  • 4 cloves garlic peeled
  • 4 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 sprig fresh rosemary
  • 1 sprig fresh thyme
  • to taste fresh cracked black pepper
  • to taste sea salt
  • to taste Fleur de Sel optional

Equipment

  • Cast iron skillet
  • Tongs
  • Meat thermometer
  • Cutting board
  • Sharp knife

Method
 

Cooking Instructions:
  1. Let the New York steaks sit at room temperature for about 30 minutes before cooking. Pat dry and season with sea salt and pepper.
  2. Heat your cast-iron skillet over medium-high heat and add the olive oil until shimmering.
  3. Place the steaks in the hot skillet and sear without overcrowding.
  4. After 3-4 minutes, add garlic, rosemary, and thyme to the skillet.
  5. Add unsalted butter and baste the steaks with it as it melts.
  6. Continue cooking for another 3-4 minutes, checking for doneness with a meat thermometer.
  7. Transfer the steaks to a cutting board and let them rest for 5-10 minutes.
  8. Slice against the grain and serve, finishing with Fleur de Sel if desired.

Notes

  • Use a heavy skillet for the best sear.
  • Let steaks rest to retain juices.
  • Experiment with different herbs for flavor variations.
