  • 4 fillets orange roughy (4-6 ounces each)
  • 2 teaspoons paprika
  • 1 teaspoon salt
  • 2 teaspoons lemon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried parsley
  • 2 tablespoons butter

Method
 

  1. Start by patting the orange roughy fillets dry with paper towels. This step is crucial for achieving that beautiful golden sear. Once dried, set them aside.
  2. In a small bowl, combine the paprika, salt, lemon pepper, garlic powder, and dried parsley. Use a whisk or fork to mix well. Generously season both sides of each fillet with the spice mixture.
  3. Place your large skillet over medium heat and add the 2 tablespoons of butter. Allow the butter to melt and start bubbling, but be careful not to let it burn.
  4. Once the butter is bubbling, carefully place the seasoned orange roughy fillets in the skillet. Avoid overcrowding the pan; you may need to cook in batches. Sear the fillets for about 3-4 minutes on one side until golden brown.
  5. Using a spatula, gently flip the fillets over. Continue to cook for another 3-4 minutes on the other side until the fish is opaque and flakes easily with a fork.
  6. Once cooked, transfer the fillets to a plate. Drizzle any remaining butter from the skillet over the fish for extra flavor. Serve immediately, garnished with fresh herbs or lemon wedges if desired.

  • Do not skip drying the fish; moisture will prevent a good sear.
  • Avoid cooking on too high heat to prevent burning the butter.
