Ingredients
  

For the Pad Thai:
  • 8 ounces thick rice stick noodles
  • ½ cup freshly squeezed lime juice
  • ½ cup water
  • 3 tablespoons fish sauce
  • 1 tablespoon unseasoned rice vinegar
  • 3 tablespoons brown sugar
  • 4 tablespoons vegetable or canola oil divided
  • 12 ounces medium shrimp peeled and deveined
  • 3 cloves garlic minced
  • 2 large eggs beaten lightly
  • 6 tablespoons chopped, unsalted roasted peanuts
  • 3 cups bean sprouts well rinsed
  • 5 whole green onions sliced thinly
  • 1 medium lime cut into wedges
  • ½ cup chopped fresh cilantro

Method
 

Instructions
  1. Step 1: Prepare the Noodles - Start by soaking the thick rice stick noodles in warm water for about 30 minutes or until they are pliable but not fully cooked. Drain and set aside.
  2. Step 2: Make the Sauce - In a small bowl, whisk together the lime juice, water, fish sauce, rice vinegar, and brown sugar until the sugar dissolves. Set this mixture aside as it will be used to flavor the noodles.
  3. Step 3: Cook the Shrimp - In a large wok or skillet, heat 2 tablespoons of oil over medium-high heat. Add the shrimp and cook for 2-3 minutes until they turn pink and opaque. Remove the shrimp from the pan and set aside.
  4. Step 4: Sauté the Garlic - In the same skillet, add another tablespoon of oil. Sauté the minced garlic for about 30 seconds, or until fragrant. Be careful not to burn it!
  5. Step 5: Scramble the Eggs - Push the garlic to one side of the skillet and pour in the beaten eggs. Scramble them until just set, then mix them into the garlic.
  6. Step 6: Combine Everything - Add the soaked noodles to the skillet, along with the sauce you prepared earlier. Toss everything together to coat the noodles evenly.
  7. Step 7: Add the Shrimp and Veggies - Return the cooked shrimp to the skillet, along with the bean sprouts and green onions. Stir-fry for another 2-3 minutes, allowing the noodles to absorb the sauce and everything to heat through.
  8. Step 8: Serve - Remove from heat and transfer to serving plates. Garnish with chopped peanuts, fresh cilantro, and lime wedges. Enjoy your homemade Pad Thai Shrimp!

Notes

  • Soak the rice noodles long enough to make them pliable, but avoid over-soaking as they can become mushy.
  • Ensure the garlic does not burn when sautéing, as it can turn bitter and affect the flavor of the dish.
