Method
 

Stepwise Method:
  1. In a large mixing bowl, combine the Greek yogurt, olive oil, lemon zest, lemon juice, minced garlic, Italian seasoning, kosher salt, and black pepper. Whisk until well combined and creamy.
  2. Add the chicken thighs to the bowl of marinade, ensuring each piece is generously coated. Cover the bowl with plastic wrap or transfer everything to a resealable bag. Allow it to marinate in the refrigerator for at least 1 hour, but ideally overnight for maximum flavor.
  3. When you’re ready to cook, preheat your oven to 400°F (200°C). This high temperature will help achieve a beautiful golden brown on the chicken.
  4. Remove the chicken thighs from the marinade and place them in a baking dish in a single layer. Reserve any remaining marinade for basting during cooking.
