Oreo Cupcakes

Ingredients
  

For the Cupcakes:
  • 12 units chocolate cupcakes
  • 12 units Oreo cookies cut in half
For the Frosting:
  • 3/4 cup butter softened
  • 2 1/4 cups powdered sugar
  • 1-2 tablespoons heavy whipping cream
  • 1 teaspoon vanilla extract
  • 2/3 cup Oreo cookie crumbs

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your chocolate cupcake batter according to your favorite recipe or use a store-bought mix. Fill each cupcake liner about two-thirds full.
  3. Take 12 Oreo cookies and cut them in half. Place half of each cookie at the bottom of the cupcake liners, then pour the batter on top.
  4. Bake your cupcakes for about 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  5. In a mixing bowl, beat the softened butter until creamy. Gradually add in the powdered sugar, mixing on low speed until combined.
  6. Add 1 tablespoon of heavy whipping cream and the vanilla extract to the frosting mixture. Beat on high speed until fluffy.
  7. Crush the remaining 12 Oreo cookies into crumbs and fold the Oreo cookie crumbs into the frosting.
  8. Once the cupcakes have cooled completely, use a piping bag to frost each cupcake generously with the Oreo frosting.
  9. Top each cupcake with half of an Oreo cookie.

Notes

  • For a dairy-free version, substitute the butter with vegan butter and use coconut cream in place of heavy whipping cream.
  • Use a gluten-free chocolate cake mix for gluten-free cupcakes.
  • Reduce the amount of powdered sugar in the frosting for a less sweet taste.
