Ingredients
  

  • 2 tsp olive oil
  • 4 (6 oz) skinless salmon fillets (1-inch thick)

  • 2 cloves garlic, minced
  • 2 1/2 tsp minced fresh rosemary
  • 5 Tbsp chicken broth, divided
  • 1 1/2 tsp orange zest
  • 2/3 cup fresh orange juice
  • 1 Tbsp fresh lemon juice
  • 1 1/2 Tbsp honey
  • 2 1/2 tsp cornstarch

Method
 

  1. Start by patting the salmon fillets dry with paper towels. This helps achieve a perfect sear. Season both sides generously with salt and freshly ground black pepper.
  2. In a large skillet, heat the olive oil over medium-high heat. Once hot, carefully add the salmon fillets to the skillet, skin side down. Sear for about 4-5 minutes, or until the salmon releases easily from the pan and is golden brown. Flip the fillets and cook for an additional 3-4 minutes on the other side until cooked through. Remove the salmon from the skillet and set aside.
  3. In the same skillet, reduce the heat to medium and add the minced garlic and rosemary. Sauté for about 30 seconds until fragrant. Then, pour in 3 tablespoons of chicken broth, orange zest, fresh orange juice, lemon juice, and honey. Stir well and bring to a simmer.
  4. In a small bowl, mix the cornstarch with the remaining 2 tablespoons of chicken broth until smooth. Add this mixture to the skillet, stirring constantly until the glaze thickens, about 2-3 minutes.
  5. Return the salmon fillets to the skillet, spooning the glaze over them to coat well. Let them simmer for an additional minute to absorb the flavors.
