Ingredients
  

For the Stir Fry:
  • 2 Tbsp coconut oil or avocado oil for sautéing
  • 2 tsp toasted sesame oil
  • 1/2 unit yellow onion, diced
  • 2 large carrots, peeled and chopped
  • 1/2 unit red bell pepper, cut into matchsticks
  • 1/2 unit yellow bell pepper, cut into matchsticks
  • 1 large crown broccoli, chopped into florets
  • 4 cloves garlic, minced
  • 2 tsp fresh ginger, peeled and grated
  • 1 1/2 pounds raw shrimp, deveined
  • 5 Tbsp coconut aminos soy sauce alternative
  • 2 unit oranges, zested
  • 2 Tbsp orange juice
  • 1 Tbsp honey
  • 1 Tbsp red chili sauce, such as sriracha
  • 2 tsp tapioca flour
  • 1/2 tsp red pepper flakes (optional)
  • 1 Tbsp sesame seeds for garnish
  • 4 cups white rice, steamed
  • 1 bunch green onion, chopped for garnish

Method
 

Instructions:
  1. Step 1: Prep the Ingredients - Start by preparing all your ingredients. Chop the vegetables, mince the garlic, and grate the ginger. This step will make the cooking process much smoother.
  2. Step 2: Heat the Oils - In a wok or large skillet, heat the coconut oil (or avocado oil) over medium-high heat. Once hot, add the toasted sesame oil for extra flavor.
  3. Step 3: Sauté the Aromatics - Add the diced onion to the pan and sauté for about 2-3 minutes until it turns translucent. Then, toss in the minced garlic and grated ginger, stirring for another minute until fragrant.
  4. Step 4: Add the Vegetables - Next, add the chopped carrots, broccoli florets, and both bell peppers. Stir-fry for about 5-7 minutes until the vegetables are tender-crisp.
  5. Step 5: Cook the Shrimp - Push the veggies to the side of the pan and add the raw shrimp. Cook for about 2-3 minutes on each side until they turn pink and opaque.
  6. Step 6: Create the Sauce - In a small bowl, mix together the coconut aminos, orange zest, orange juice, honey, red chili sauce, and tapioca flour. Pour this mixture over the shrimp and vegetables, stirring well to coat everything evenly.
  7. Step 7: Finish with Seasonings - If you like things spicy, sprinkle in the red pepper flakes. Allow the stir fry to cook for another minute until the sauce thickens slightly. Adjust the seasoning with more coconut aminos if necessary.
  8. Step 8: Serve Hot - Remove the stir fry from heat and garnish with sesame seeds and chopped green onions. Serve it over a bed of steaming white rice for a complete meal.

  • Use room temperature shrimp for even cooking.
