Once the onions have cooled enough to handle, fold them into the creamy mixture. Stir gently until the onions are evenly distributed throughout the dip.
For the best flavor, cover the onion dip and refrigerate it for at least 30 minutes before serving. When you're ready to serve, give the dip a good stir, garnish with chopped chives if desired, and enjoy with your favorite chips, crackers, or fresh veggies.
