Ingredients
  

For the Tetrazzini:
  • 4 tablespoons butter (unsalted, divided)
  • 1 cup chicken breast (boneless and skinless, cut into cubes)
  • 2 cups mushrooms (cleaned and sliced)
  • Salt (to taste)
  • Pepper (to taste)
  • 1 teaspoon garlic powder (optional)
  • 1 cup all-purpose flour
  • 3 cups chicken broth (low sodium)
  • 1 cup milk (2% preferred)
  • 8 ounces spaghetti (uncooked)
  • 1 cup Parmesan cheese
  • 2 tablespoons parsley (fresh, chopped)

Method
 

Cooking Instructions:
  1. Start by melting 2 tablespoons of butter in your large pot over medium heat. Once the butter is melted and bubbling, add the cubed chicken breast. Season with salt and pepper, and cook until the chicken is browned and cooked through, about 5-7 minutes. Remove the chicken from the pot and set aside.
  2. In the same pot, add the remaining 2 tablespoons of butter. Once melted, add the sliced mushrooms. Sauté for about 5 minutes until they are tender and golden. If you’re using garlic powder, sprinkle it in during the last minute of cooking.
  3. Sprinkle the flour over the mushrooms and stir well to combine. Cook for about 1 minute to remove the raw flour taste. Gradually whisk in the chicken broth and milk, stirring constantly to avoid lumps. Bring the mixture to a simmer.
  4. Once the sauce is bubbling, add the uncooked spaghetti and the sautéed chicken back into the pot. Stir to combine everything well. Cover the pot and reduce the heat to low. Let it simmer for about 15-20 minutes, stirring occasionally, until the pasta is cooked al dente and has absorbed some of the sauce.
  5. Remove the pot from heat and stir in the Parmesan cheese until melted and creamy. Taste and adjust seasoning with more salt and pepper if necessary. Let it sit for a few minutes to thicken up.
  6. Scoop generous portions into bowls and sprinkle with fresh chopped parsley for a pop of color and flavor. Serve hot and enjoy this delightful One Pot Chicken Tetrazzini!
