Ingredients
  

  • 1 pound boneless, skinless chicken breast cut into 1-inch pieces
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt divided
  • 1 teaspoon pepper divided
  • 2 tablespoons olive oil divided
  • 1 medium zucchini sliced into half moons
  • 1 unit red bell pepper chopped
  • 1 unit yellow pepper chopped
  • 1 pound broccoli crown cut into small florets
  • 1 small red onion diced
  • 1/4 cup chicken broth
  • 1 lemon juice of (about 3 tablespoons)
  • 1/4 cup Italian dressing
  • Shaved parmesan cheese for garnishing

Method
 

  1. In a bowl, mix the chicken pieces with Italian seasoning, 1/2 teaspoon of salt, and 1/2 teaspoon of pepper. Ensure the chicken is well-coated with the seasoning.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook until golden brown, about 5-7 minutes. Stir occasionally to ensure even cooking. Once cooked, remove the chicken from the skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of olive oil. Toss in the zucchini, red bell pepper, yellow pepper, broccoli, and red onion. Sauté the vegetables for about 5-7 minutes or until they are tender yet still crisp.
  4. Pour in the chicken broth and scrape the bottom of the skillet with a spatula to release any browned bits. These bits are packed with flavor and will enhance your dish!
  5. Return the cooked chicken to the skillet with the sautéed vegetables. Add the lemon juice and Italian dressing. Stir everything together, allowing the flavors to meld for about 2-3 minutes.
  6. Remove the skillet from heat. Top your One Pan Italian Chicken and Veggie Skillet with shaved parmesan cheese for a deliciously cheesy finish. Serve warm, and enjoy the burst of flavors in every bite!
