Ingredients

  • 1/2 cup unsalted butter softened to room temperature
  • 1 cup Nutella the star ingredient
  • 2/3 cup light brown sugar adds moisture
  • 2/3 cup white granulated sugar sweetens the cookies
  • 1 large egg room temperature
  • 2 cups all-purpose flour the base for the cookie dough
  • 1 tablespoon cornstarch ensures a soft and chewy texture
  • 1/2 teaspoon salt enhances flavors

Equipment

  • Mixing bowl
  • Hand mixer
  • Measuring cups and spoons
  • Baking sheet
  • Parchment paper
  • Cookie Scoop

Method

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the softened unsalted butter, light brown sugar, and white granulated sugar. Beat until light and fluffy, about 2-3 minutes.
  3. Add the large egg and the cup of Nutella to the mixture. Beat on low speed until fully incorporated.
  4. In a separate bowl, whisk together the all-purpose flour, cornstarch, and salt. Gradually add to the wet ingredients, mixing on low speed until just combined.
  5. Scoop the dough onto a baking sheet lined with parchment paper, leaving about 2 inches between each cookie.
  6. Bake for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly underbaked.
  7. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • Refrigerate cookie dough for up to 3 days before baking.
  • Baked cookies can be stored in an airtight container for up to a week.
  • Feel free to add nuts or chocolate chunks for extra texture.
