Ingredients
  

  • 12 oz long pasta (spaghetti, linguine, or fettuccine)
  • 3 tablespoons olive oil (extra virgin)
  • 2 tablespoons dried Italian herbs (oregano, basil, thyme blend)
  • 2 cubes vegetable stock

Method
 

  1. Start by bringing a large pot of salted water to a boil. Once boiling, add the long pasta and cook according to package instructions until al dente, about 8-10 minutes.
  2. While the pasta is cooking, heat the olive oil in a skillet over medium heat. Add the dried Italian herbs and sauté for about 1-2 minutes.
  3. Dissolve the vegetable stock cubes in a cup of hot water. Add this mixture to the skillet with the herbs and let it simmer for a few minutes.
  4. Once the pasta is cooked, drain it in a colander and reserve a cup of the cooking water. Add the drained pasta to the skillet and toss everything together.
  5. Taste the pasta and adjust seasoning with more salt if necessary. Serve hot, garnished with fresh herbs or Parmesan cheese if desired.

  • For a low-carb option, try using spiralized zucchini or Shirataki noodles.
  • This recipe is vegan-friendly and can be made gluten-free using gluten-free pasta.
