Ingredients
  

  • 1 cup semisweet chocolate chips
  • ½ cup creamy peanut butter
  • 5 tablespoons salted butter
  • 9 cups miniature marshmallows
  • 1 teaspoon vanilla extract
  • 7 cups Rice Chex cereal
  • Powdered sugar for dusting

Method
 

  1. Start by lining a baking sheet with parchment paper. This will help prevent sticking and make cleanup a breeze.
  2. In a medium saucepan over low heat, combine the semisweet chocolate chips, creamy peanut butter, and salted butter. Stir continuously until the mixture is completely melted and smooth. Once melted, remove from heat and stir in the vanilla extract.
  3. In a large mixing bowl, add the Rice Chex cereal and miniature marshmallows. Pour the melted chocolate mixture over the cereal and marshmallows. Using a spatula, gently fold everything together until the cereal and marshmallows are evenly coated.
  4. Transfer the mixture to the prepared baking sheet. Spread it out evenly to help it cool down faster. Allow it to sit at room temperature for about 30 minutes or until set.
  5. Once the mixture is set, dust the top with powdered sugar for an extra touch of sweetness. You can even toss it in a large bowl with more powdered sugar if you prefer a heavier coating.
  6. Break the treats into pieces and serve them in a bowl, or package them up for a sweet gift. Enjoy every crunchy, gooey bite!

Notes

  • Store treats in an airtight container at room temperature for up to a week.
  • Freeze treats by separating layers with parchment paper to prevent sticking.
  • If treats become soft, place them in the oven at a low temperature for a few minutes to crisp them up again.
