Ingredients

For the Chicken:
  • 3-4 pounds boneless skinless chicken breasts or thighs
For the Marinade:
  • 1/2 cup honey
  • 1/2 cup white miso paste
  • 3 tablespoons sesame oil
  • 1/2 teaspoon crushed red pepper

Equipment

  • Mixing bowl
  • Baking sheet
  • Meat thermometer
  • Whisk

Method

Preparation Steps:
  1. In a mixing bowl, whisk together the honey, white miso paste, sesame oil, and crushed red pepper until smooth.
  2. Place the chicken in a large resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated. Seal or cover and refrigerate for at least 30 minutes.
  3. Preheat your oven to 400°F (200°C).
  4. Remove the chicken from the marinade and place it on a baking sheet lined with parchment paper. Bake for about 25-30 minutes or until the internal temperature reaches 165°F (74°C).
  5. Baste the chicken with reserved marinade halfway through cooking. For a crispy finish, broil for the last 2-3 minutes.
  6. Let the chicken rest for a few minutes before slicing. Serve with your favorite sides and drizzle any remaining glaze over the top.

Notes

  • Using fresh honey and high-quality miso enhances the flavor.
  • Letting chicken rest after baking retains juices for a moist result.
  • Marinate chicken overnight for deeper flavor.
