  • 1/2 cup fresh herbs roughly chopped (basil and dill recommended)
  • 1/2 cup crumbled feta cheese
  • 1 whole lemon juice from
  • to taste Kosher salt and pepper
  • 6-8 pieces toasted whole grain bread
  • for serving Fresh arugula or microgreens

Equipment

  • Mixing bowl
  • Cutting board and knife
  • Spoon
  • Toaster
  • Measuring cups and spoons

Method

  1. Step 1: Prepare the Ingredients. Start by halving the ripe avocados and removing the pits. Scoop the flesh into a mixing bowl.
  2. Step 2: Shred the Chicken. If you haven’t already, shred the cooked chicken. You can use leftover chicken or a store-bought rotisserie chicken for convenience.
  3. Step 3: Chop the Hard Boiled Eggs. Next, chop the hard boiled eggs into small pieces and add them to the bowl with the avocados.
  4. Step 4: Mix in the Sun-Dried Tomatoes. Chop the oil packed sun-dried tomatoes and add them to the mixture, bringing a wonderful umami flavor to the salad.
  5. Step 5: Add Fresh Herbs. Roughly chop your fresh herbs (basil and dill work beautifully) and fold them into the salad.
  6. Step 6: Crumble in Feta. Add the crumbled feta cheese for a tangy kick that complements the creaminess of the avocados.
  7. Step 7: Season & Squeeze. Squeeze the juice from one lemon over the mixture and season generously with kosher salt and pepper. Mix everything together until well combined.
  8. Step 8: Toast Your Bread. While you mix, toast your whole grain bread until golden brown. This step adds a delightful crunch to your salad.
  9. Step 9: Serve. Serve the salad on a slice of toasted bread, topped with fresh arugula or microgreens. Enjoy your Mediterranean Avocado Chicken Salad as a light meal or appetizer!

Notes

  • Store leftovers in an airtight container in the refrigerator for up to two days.
  • For a vegetarian version, replace the chicken with chickpeas for added protein.
  • Use fresh lemon juice to prevent avocados from browning.
