Ingredients
  

For the Meatloaf Muffins:
  • 1.5 pounds ground beef (80/20 or similar)
  • 1 cup finely chopped onion
  • 2 cloves garlic (minced)
  • 0.5 cup breadcrumbs
  • 1 cup ketchup (divided)
  • 1 tablespoon Worcestershire sauce
  • 1 large egg (lightly beaten)
  • 1 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper (to taste)
  • 1 tablespoon olive oil (for sautéing)

Method
 

Cooking Instructions:
  1. Step 1: Preheat and Prepare - Preheat your oven to 375°F (190°C). Grease the muffin tin with cooking spray or olive oil.
  2. Step 2: Sauté the Aromatics - Heat olive oil in a skillet over medium heat. Sauté onion for 3-4 minutes, then add garlic and cook for 1 minute. Remove from heat.
  3. Step 3: Mix the Meatloaf Ingredients - In a mixing bowl, combine ground beef, sautéed onion and garlic, breadcrumbs, ¾ cup ketchup, Worcestershire sauce, egg, oregano, salt, and pepper. Mix until just combined.
  4. Step 4: Portion the Mixture - Scoop the meat mixture into the muffin tin, filling each cup about ¾ full.
  5. Step 5: Glaze with Ketchup - Top each muffin with a spoonful of the remaining ketchup.
  6. Step 6: Bake to Perfection - Bake for 20-25 minutes until the internal temperature reaches 160°F (70°C).
  7. Step 7: Cool and Serve - Let the muffins cool slightly before removing them. Serve warm.

Notes

  • These muffins freeze well; store in an airtight container for up to 3 months.
  • For a low-carb version, substitute breadcrumbs with almond flour.
  • Feel free to add your favorite vegetables to the meat mixture!
