Cooking Instructions:
- Step 1: Preheat and Prepare - Preheat your oven to 375°F (190°C). Grease the muffin tin with cooking spray or olive oil.
- Step 2: Sauté the Aromatics - Heat olive oil in a skillet over medium heat. Sauté onion for 3-4 minutes, then add garlic and cook for 1 minute. Remove from heat.
- Step 3: Mix the Meatloaf Ingredients - In a mixing bowl, combine ground beef, sautéed onion and garlic, breadcrumbs, ¾ cup ketchup, Worcestershire sauce, egg, oregano, salt, and pepper. Mix until just combined.
- Step 4: Portion the Mixture - Scoop the meat mixture into the muffin tin, filling each cup about ¾ full.
- Step 5: Glaze with Ketchup - Top each muffin with a spoonful of the remaining ketchup.
- Step 6: Bake to Perfection - Bake for 20-25 minutes until the internal temperature reaches 160°F (70°C).
- Step 7: Cool and Serve - Let the muffins cool slightly before removing them. Serve warm.

- For a low-carb version, substitute breadcrumbs with almond flour.
