Ingredients
  

  • 1 lb ground sausage (browned and grease drained)
  • 2 cups pancake mix
  • 1.5 cups water
  • 0.5 cup real maple syrup
  • 1 cup shredded cheddar cheese

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Grease your muffin tin with non-stick spray or line it with muffin liners.
  3. In a skillet over medium heat, brown the ground sausage until fully cooked. Drain excess grease and set aside.
  4. In a large mixing bowl, combine pancake mix and water, whisking until just combined. Fold in maple syrup and cheese.
  5. Fold the cooked sausage into the batter.
  6. Spoon the batter into the muffin tin, filling each cup about ¾ full.
  7. Bake for 15-20 minutes or until a toothpick comes out clean.
  8. Cool in the tin for 5 minutes before transferring to a wire rack.

Notes

  • For a seasonal twist, add pumpkin spice in the fall.
  • Use different cheeses like pepper jack for a spicy kick.
  • Store in an airtight container for up to 3 days.
