Matcha Chia Pudding

Ingredients
  

  • 1 cup plain Greek yogurt
  • 1 cup milk of choice (I use Fairlife for its creaminess)
  • 1 tablespoon pure maple syrup
  • 2 tablespoons chia seeds
  • 1 teaspoon matcha powder (plus additional for dusting the top)
  • 1 teaspoon vanilla extract

Method
 

  1. In a mixing bowl, whisk together the plain Greek yogurt, milk, maple syrup, and vanilla extract until smooth and well combined.
  2. Add the matcha powder and chia seeds to the mixture. Whisk again until the matcha is fully integrated.
  3. Cover the bowl with plastic wrap or transfer the mixture into individual serving containers. Refrigerate for at least 2 hours, or preferably overnight.
  4. Once the pudding has set, stir it gently to combine again. Scoop into bowls or jars, and dust with a sprinkle of matcha powder for an elegant finish.

Notes

  • For a vegan version, substitute Greek yogurt with plant-based yogurt and use non-dairy milk.
  • Adjust the milk to achieve your desired pudding consistency.
  • Store in an airtight container in the refrigerator for up to 5 days.
