Ingredients
  

  • 2 tablespoons light butter spread I used Smart Balance Light for a creamier texture
  • 4 cups mini marshmallows these create that signature gooeyness
  • 6 cups Rice Krispies the base of our treats that adds the crunch
  • Cooking spray for easy clean-up and to prevent sticking

Equipment

  • Large saucepan
  • Wooden spoon or spatula
  • 9x13-inch baking dish
  • Cooking Spray

Method
 

  1. Start by greasing your 9x13-inch baking dish with cooking spray. This will ensure your treats come out easily once they are set.
  2. In a large saucepan, melt the 2 tablespoons of light butter spread over low heat. Stir occasionally to prevent burning.
  3. Once the butter is melted, add in the 4 cups of mini marshmallows. Continue stirring until the marshmallows are fully melted and the mixture is smooth.
  4. Remove the saucepan from the heat. Quickly stir in the 6 cups of Rice Krispies, mixing until all the cereal is evenly coated with the marshmallow mixture.
  5. Transfer the mixture into the prepared baking dish. Using a greased spatula or your hands (slightly dampened to prevent sticking), press the mixture down firmly and evenly.
  6. Allow the treats to cool completely at room temperature. Once set, cut them into squares or rectangles, and they’re ready to be enjoyed!

Notes

  • Store in an airtight container at room temperature for up to a week.
  • For longer freshness, refrigerate them for up to two weeks.
  • Freeze individual squares for up to three months, thawing at room temperature before enjoying.
