Ingredients
  

  • 1 cup steamed then frozen cauliflower adds creaminess and nutrition without the carbs
  • 1 small carrot chopped
  • 1 tsp ground cinnamon for flavor
  • 1 tsp fresh ginger peeled and minced
  • a pinch nutmeg for flavor
  • 1.5 cups light canned coconut milk provides creaminess
  • 1.5 tbsp Truvia Sweet Complete All-Purpose Sweetener low-carb sweetener
  • 2 scoops collagen powder or vanilla protein powder optional for protein boost
  • 1 tbsp chopped walnuts for crunch
  • 1 tbsp unsweetened shredded coconut for texture
  • 1 tbsp coconut whipped cream for topping

Method
 

  1. Gather all your ingredients. Start by steaming the cauliflower until tender, then allow it to cool before freezing it. Chop the small carrot and mince the fresh ginger.
  2. In your high-speed blender, combine the frozen cauliflower, chopped carrot, ground cinnamon, minced ginger, and a pinch of nutmeg.
  3. Pour in the light canned coconut milk. This will give your smoothie its rich and creamy texture.
  4. Add the Truvia Sweet Complete sweetener to the blender. You can adjust the amount based on your preference for sweetness.
  5. If you’re using collagen powder or vanilla protein powder, add it to the mixture for an extra protein boost.
  6. Secure the lid on your blender and blend on high until everything is completely smooth and creamy. You may need to stop and scrape down the sides to ensure even blending.
  7. Pour the smoothie into a glass and top with chopped walnuts and unsweetened shredded coconut. For an extra indulgent touch, add a dollop of coconut whipped cream on top.

Notes

  • Feel free to adjust the sweetness by adding more Truvia or a splash of vanilla extract.
