Ingredients
  

For the Totchos:
  • 32 ounces frozen tater tots (1 bag)
  • 2 tablespoons taco seasoning (divided)
  • 1 tablespoon olive oil
  • 1 pound 90% lean ground beef
  • 1 white onion (diced)
  • 1 clove garlic (minced)
  • 8 ounces freshly shredded Colby jack cheese
  • Pico de gallo (for topping)
  • Sour cream (for topping)
  • Guacamole (for topping)
  • Sliced green onions (for garnish)
  • Chopped fresh cilantro (for garnish)
  • Diced jalapeño peppers (for garnish)

Method
 

Directions:
  1. Preheat your oven to 425°F (220°C). This will ensure your tater tots get perfectly crispy.
  2. Spread the frozen tater tots evenly on a baking sheet. Bake according to the package instructions, typically for about 25-30 minutes, until they are golden and crispy.
  3. While the tater tots are baking, heat the olive oil in a large skillet over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional minute.
  4. Add the ground beef to the skillet, breaking it apart with a spatula. Sprinkle 1 tablespoon of taco seasoning over the meat and cook until browned and fully cooked through, about 7-10 minutes. Stir occasionally to ensure even cooking. Drain any excess fat.
  5. Once the tater tots are done baking, remove them from the oven. Layer the cooked beef mixture over the tater tots and sprinkle the freshly shredded Colby jack cheese on top. Return to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  6. Remove the Totchos from the oven and top with pico de gallo, a dollop of sour cream, guacamole, sliced green onions, chopped cilantro, and diced jalapeño peppers. Serve immediately and enjoy!
