Ingredients

  • 8 ounces pasta spaghetti, linguine, or fettuccine
  • 2 large lemons for juice and zest
  • 1 cup grated Parmesan cheese freshly grated
  • Stone House Seasoning to taste

Equipment

  • Large pot
  • Colander
  • Mixing bowl
  • Whisk
  • Serving bowl

Method

  1. Bring a large pot of salted water to a boil. Add your choice of pasta and cook according to the package instructions until al dente. Reserve about ½ cup of the pasta water, then drain the pasta using a colander.
  2. While the pasta is cooking, zest and juice the lemons. In a mixing bowl, combine the lemon juice, lemon zest, and grated Parmesan cheese. Whisk together until well combined.
  3. Return the drained pasta to the pot over low heat. Pour the lemon and cheese mixture over the pasta. Toss everything together, adding reserved pasta water a little at a time until you reach your desired consistency.
  4. Sprinkle Stone House Seasoning over the pasta to taste. Toss once more to distribute the seasoning evenly. Serve immediately, garnished with additional lemon zest and Parmesan if desired.

Notes

  • For a healthier option, consider using whole wheat or gluten-free pasta.
  • Try using lime or orange juice and zest for a different twist on flavor.
  • Nutritional yeast can be used as a dairy-free Parmesan substitute.
  • Make sure to reserve pasta water for the perfect sauce consistency.
