  • 1 tsp ground paprika
  • 1 tsp sea salt
  • 2 Tbsp ghee or butter for cooking

Method
 

  1. Begin by cutting the boneless skinless chicken breasts into bite-sized pieces. Aim for uniform pieces to ensure even cooking.
  2. In a mixing bowl, combine avocado oil, lemon zest, lemon juice, minced garlic, onion powder, paprika, and sea salt. Whisk the ingredients together until well combined.
  3. Add the chicken pieces to the marinade, ensuring each piece is thoroughly coated. Allow the chicken to marinate for at least 15-30 minutes. If you have time, let it marinate longer to enhance the flavors.
  4. In a large skillet or frying pan, melt the ghee or butter over medium heat. Ensure the pan is hot before adding the chicken.
  5. Once the skillet is hot, add the marinated chicken pieces in a single layer. Cook for about 5-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is golden brown.
  6. Once cooked, remove the chicken bites from the skillet and let them rest for a couple of minutes. Serve warm, garnished with fresh herbs or lemon wedges if desired.
