Ingredients

Method
 

  1. Start by seasoning the chicken breasts with garlic powder, lemon pepper seasoning, salt, and pepper. This will ensure the chicken is flavorful all the way through.
  2. In a large skillet, heat the olive oil over medium-high heat. Once hot, add the seasoned chicken breasts. Cook for about 6-7 minutes on each side or until they reach an internal temperature of 165°F (75°C). Remove the chicken from the skillet and set it aside to rest.
  3. In the same skillet, melt the butter over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant. Pour in the chicken broth and lemon juice, scraping any browned bits off the bottom of the skillet. This adds depth to your sauce!
  4. Reduce the heat to low and stir in the heavy cream. Allow it to simmer gently for a couple of minutes. Then, add the grated parmesan cheese, stirring until melted and well combined.
  5. If your gnocchi is uncooked, add it directly to the sauce. If it's pre-cooked, simply add it to the skillet. Cook for an additional 3-4 minutes, allowing the gnocchi to absorb some sauce. If needed, you can add a splash of chicken broth to adjust the consistency.
  6. Slice the rested chicken breasts and add them back to the skillet along with the fresh spinach. Stir until the spinach wilts and everything is well combined. Taste and adjust seasoning with salt and pepper.
  7. Once everything is heated through and the spinach is wilted, your Lemon Chicken Gnocchi is ready to serve. Plate it up and enjoy the creamy, tangy goodness!

Notes

  • For extra lemon flavor, add lemon zest along with the lemon juice.
  • Be careful not to overcook the gnocchi; they only need a few minutes in the sauce.
  • If you prefer a lighter version, substitute half-and-half for the heavy cream.
  • Leftovers can be reheated on the stove; add a splash of broth to loosen the sauce.
