Ingredients
  

  • 2 tsp garlic powder
  • 1 1/2 tsp onion powder
  • 2 tsp paprika or smoked paprika
  • 2 tsp dried oregano
  • 1 1/2 tsp black pepper
  • 1 tsp salt
  • 3 lbs boneless skinless chicken thighs
  • 1 tbsp olive oil
  • 2 tbsp fresh cilantro, chopped (optional)

Method
 

  1. Start by patting the chicken thighs dry with paper towels. This helps to get a nice sear on the meat.
  2. In a small bowl, combine the garlic powder, onion powder, paprika, dried oregano, black pepper, and salt. This spice blend will give your chicken a robust flavor.
  3. Sprinkle the spice mixture evenly over both sides of the chicken thighs. Be generous; each piece should be well-coated for maximum flavor.
  4. In a large skillet, heat the olive oil over medium-high heat. You want the oil hot enough that it shimmers but doesn’t smoke.
  5. Place the seasoned chicken thighs into the skillet in a single layer. Cook for about 5-7 minutes on one side until golden brown, then flip and cook for an additional 5-7 minutes on the other side until the chicken is fully cooked and reaches an internal temperature of 165°F (75°C).
  6. Once cooked, remove the chicken from the skillet and let it rest for a few minutes. If desired, garnish with freshly chopped cilantro before serving.

Notes

  • Do not overcrowd the skillet when cooking to ensure proper searing.
  • Chicken should be at room temperature before cooking for even results.
  • Use a meat thermometer for perfect doneness, aiming for 165°F (75°C).
