For the Roll Ups:
  • 2 cups marinara sauce homemade or jarred, plus more for serving
  • 8 pieces uncooked lasagna noodles wheat or gluten-free
  • 16 ounces 2% cottage cheese drained
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped parsley
  • 2 tablespoons pesto prepared or homemade
  • 1 large egg
  • 1 teaspoon kosher salt
  • to taste black pepper
  • 1/2 cup part-skim mozzarella cheese shredded (about 3 oz)
  • Basil or parsley optional for garnish

Method
 

Cooking Steps:
  1. Step 1: Prepare the Marinara Sauce. In a saucepan over medium heat, warm your homemade or jarred marinara sauce. Allow it to simmer gently while you prepare the other components of the dish.
  2. Step 2: Cook the Lasagna Noodles. Bring a large pot of salted water to a boil. Add the lasagna noodles and cook according to package instructions until al dente. Drain the noodles and lay them flat on a clean kitchen towel to cool.
  3. Step 3: Make the Cheese Filling. In a mixing bowl, combine the drained cottage cheese, grated Parmesan cheese, chopped parsley, pesto, egg, kosher salt, and black pepper. Mix well until all ingredients are thoroughly combined.
  4. Step 4: Assemble the Roll Ups. Spread a thin layer of marinara sauce on the bottom of a 9x13 inch baking dish. Take one lasagna noodle, spread about 1/4 cup of the cheese filling along the length of the noodle, and roll it up tightly. Place the roll seam-side down in the baking dish. Repeat with the remaining noodles and filling.
  5. Step 5: Top with Sauce and Cheese. Once all the roll-ups are in the baking dish, pour the remaining marinara sauce over the top. Sprinkle shredded mozzarella cheese evenly over the sauce.
  6. Step 6: Bake. Preheat your oven to 375°F (190°C). Cover the baking dish with aluminum foil and bake for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
