Ingredients
  

  • 1 pound ground lamb
  • 2 cloves garlic minced
  • 2 each green onions sliced
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/2 teaspoon dried mustard
  • 1/2 teaspoon smoked paprika
  • 1 head iceberg or butter lettuce
  • 1/2 each red onion thinly sliced
  • 1/3 cup whole sun-dried tomatoes
  • Chopped fresh parsley for topping
For the Whipped Feta Spread:
  • 6 ounces feta cheese
  • 2 tablespoons whipped cream cheese
  • 1/3 cup marinated artichokes drained and chopped
  • Black pepper for flavor

Method
 

  1. In a large mixing bowl, combine the ground lamb, minced garlic, sliced green onions, salt, pepper, dried mustard, and smoked paprika. Use your hands to gently mix all the ingredients until just combined, being careful not to overwork the meat.
  2. Once the mixture is ready, divide it into small portions and shape them into slider-sized patties, about 2 inches in diameter.
  3. Heat a skillet over medium-high heat. Add a drizzle of olive oil to the pan, and once hot, place the lamb patties in the skillet. Cook for about 3-4 minutes on each side, or until they are browned and cooked through. Remove from heat and let rest.
  4. In a food processor, combine the feta cheese, whipped cream cheese, marinated artichokes, and a pinch of black pepper. Blend until smooth and creamy. Taste and adjust seasoning if necessary.
  5. To assemble, take a lettuce leaf and place a lamb slider in the center. Top with a few slices of red onion, some sun-dried tomatoes, and a generous dollop of the whipped feta spread. Finish with a sprinkle of fresh parsley for garnish.

Notes

  • Store the lamb sliders and whipped feta spread separately in airtight containers to keep fresh.
  • For extra crunch, add fresh cucumber slices in summer.
