Once the mixture is ready, divide it into small portions and shape them into slider-sized patties, about 2 inches in diameter.
Heat a skillet over medium-high heat. Add a drizzle of olive oil to the pan, and once hot, place the lamb patties in the skillet. Cook for about 3-4 minutes on each side, or until they are browned and cooked through. Remove from heat and let rest.
In a food processor, combine the feta cheese, whipped cream cheese, marinated artichokes, and a pinch of black pepper. Blend until smooth and creamy. Taste and adjust seasoning if necessary.
