Ingredients
  

For the Crust:
  • 8 tablespoons butter melted
  • 1.5 cups graham cracker crumbs
  • 3 tablespoons sugar
For the Filling:
  • 1 cup key lime juice
  • 28 oz sweetened condensed milk 2 cans (14 oz each)
  • 4 large egg yolks
  • 2 limes zest of

Method
 

Directions:
  1. Step 1: Preheat your oven to 350°F (175°C). In a mixing bowl, combine the melted butter, graham cracker crumbs, and sugar. Stir until the mixture resembles wet sand.
  2. Step 2: Press the crust mixture firmly into the bottom and up the sides of a greased muffin tin. Make sure the crust is evenly distributed for a consistent bake.
  3. Step 3: Place the muffin tin in the preheated oven and bake for about 8-10 minutes, or until the crust is golden brown. Remove from the oven and let it cool slightly.
  4. Step 4: In a separate bowl, whisk together the key lime juice, sweetened condensed milk, egg yolks, and lime zest until fully combined and smooth.
  5. Step 5: Pour the lime filling into each cooled crust, filling them about three-quarters full.
  6. Step 6: Return the muffin tin to the oven and bake for 15-20 minutes, or until the filling is set but still slightly jiggly in the center.
  7. Step 7: Remove the tartlets from the oven and place them on a cooling rack. Allow them to cool to room temperature, then transfer them to the refrigerator to chill for at least 2 hours.
  8. Step 8: Before serving, top each tartlet with a dollop of whipped cream for an extra touch of decadence.

Notes

  • Don’t skip the chilling step for the best flavor.
  • Use fresh key limes for a brighter taste.
  • The crust can be made ahead and stored.
