Ingredients
  

For the Chicken:
  • 6 small chicken breasts (1 1/2 pounds)
  • 1/2 teaspoon salt
  • 2 cups almond flour
  • 3 large eggs
  • 1/2 cup parmesan cheese (grated)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 2 tablespoons oil (for frying)
  • 2 cups keto marinara sauce
  • 1 1/2 cups mozzarella cheese (freshly sliced)
  • 1/3 cup parmesan cheese (for topping)

  1. Step 1: Prepare the Chicken: Preheat your oven to 375°F (190°C). Place chicken breasts between two sheets of plastic wrap and pound to even thickness of about 1/2 inch.
  2. Step 2: Season the Chicken: Season both sides of the chicken with salt.
  3. Step 3: Set Up the Breading Station: In a mixing bowl, combine almond flour, grated parmesan, garlic powder, and onion powder. In another bowl, beat the eggs until smooth.
  4. Step 4: Bread the Chicken: Dip each chicken piece into the egg mixture, then coat with the almond flour mixture. Press down to ensure coating adheres.
  5. Step 5: Fry the Chicken: Heat oil in a large skillet over medium heat. Add breaded chicken breasts and cook for about 3-4 minutes on each side until golden brown.
  6. Step 6: Assemble the Dish: Spread half of the keto marinara sauce in a baking dish. Place fried chicken on top, pour remaining sauce, and layer with mozzarella and additional parmesan cheese.
  7. Step 7: Bake: Place the baking dish in the oven and bake for about 20-25 minutes until cheese is bubbly and golden.
  8. Step 8: Serve and Enjoy: Let cool for a few minutes, then serve hot, garnished with fresh basil or parsley.
