Ingredients
  

  • 2 large chicken breasts fresh, high-quality
  • 1 Tbsp olive oil
  • 2 limes zest and juice fresh
  • 4 cloves garlic crushed
  • 2-3 Tbsp peanut butter smooth or crunchy
  • 1-2 red chillies finely chopped
  • Salt & pepper to taste

Method
 

  1. Start by trimming any excess fat from the chicken breasts. Season both sides with salt and pepper.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken breasts and sear them for about 5-7 minutes on each side.
  3. In a bowl, combine the peanut butter, zest and juice of the limes, crushed garlic, and chopped red chillies. Mix until well combined.
  4. Once the chicken is cooked, reduce the heat to low. Pour the peanut sauce over the chicken and simmer for about 2-3 minutes.
  5. Remove from heat, drizzle with extra olive oil, and serve hot with lime wedges or chopped herbs.

Notes

  • Store leftovers in an airtight container in the fridge for up to 3 days.
  • Reheat gently in a skillet or microwave, adding a splash of water if necessary.
  • This dish can be frozen for up to 3 months; thaw in the fridge before reheating.
