Method
 

Instructions:
  1. Step 1: Preheat the Oven. Preheat your oven to 350°F (175°C).
  2. Step 2: Prepare the Ramekins. Lightly grease four oven-safe ramekins with cooking spray or olive oil.
  3. Step 3: Whisk the Eggs. In a mixing bowl, combine the egg whites and whole egg. Beat until well blended and slightly frothy.
  4. Step 4: Add Vegetables and Cheese. Fold in spinach, diced tomatoes, and feta cheese. Season with black pepper and salt.
  5. Step 5: Fill the Ramekins. Pour the mixture evenly into the prepared ramekins, leaving space at the top.
  6. Step 6: Bake. Place ramekins on a baking sheet and bake for 20-25 minutes until set and slightly golden.
