  • 1 cup dry lentils (any variety, preferably red)
  • 6 ounces canned crushed tomatoes (or tomato puree, avoid paste)
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon minced garlic
  • 1 teaspoon cayenne pepper (adjust based on spice preference)
  • 1 cup water
  • 4 tablespoons butter
  • 1/8 teaspoon salt (more to taste)
  • freshly ground black pepper to taste
  • 1/3 cup heavy cream
  • 2 tablespoons minced fresh cilantro

Method
 

Instructions
  1. Step 1: Rinse the lentils under cold water until the water runs clear.
  2. Step 2: In a medium saucepan, melt butter over medium heat and sauté garlic and ginger for 2 minutes.
  3. Step 3: Stir in canned crushed tomatoes and cook for about 5 minutes.
  4. Step 4: Add rinsed lentils, cayenne pepper, and water, then stir to combine.
  5. Step 5: Bring to a boil, reduce heat, cover, and simmer for 20-25 minutes until lentils are tender.
  6. Step 6: Season with salt and pepper to taste.
  7. Step 7: Stir in heavy cream and heat through for an additional 5 minutes.
  8. Step 8: Garnish with fresh cilantro and serve over rice or with naan.

Notes

  • Rinse lentils to avoid a gritty texture.
  • Don’t overcook the lentils to keep their shape.
  • Adjust seasoning as needed for the best flavor.
