Ingredients
  

For the Hush Puppies:
  • 1 cup yellow cornmeal
  • ½ cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¼ teaspoon cayenne pepper
  • 1 small onion (finely chopped)
  • ¾ cup buttermilk
  • 1 large egg
  • 1 quart vegetable oil (for frying)

Method
 

Instructions:
  1. Gather all the ingredients and ensure that your onion is finely chopped.
  2. In a large mixing bowl, combine the yellow cornmeal, all-purpose flour, baking powder, salt, and cayenne pepper. Stir until well blended.
  3. In a separate bowl, whisk together the buttermilk and egg until fully combined.
  4. Pour the wet mixture into the bowl with the dry ingredients. Add the chopped onion and stir until just combined.
  5. In a frying pan or deep skillet, heat the vegetable oil over medium-high heat. Drop a small spoonful of batter into the oil to check if it’s hot enough.
  6. Using a spoon or small ice cream scoop, drop spoonfuls of the batter into the hot oil. Fry for about 3-4 minutes on each side, or until golden brown.
  7. Remove the Hush Puppies from the oil using a slotted spoon and transfer them to a paper towel-lined plate to drain. Serve warm.

Notes

  • For a nuttier flavor, substitute all-purpose flour with whole wheat flour.
  • If you don’t have buttermilk, mix milk with vinegar and let it sit for 5 minutes.
  • For a milder flavor, use smoked paprika instead of cayenne pepper.
