Instructions:
- Gather all the ingredients and ensure that your onion is finely chopped.
- In a large mixing bowl, combine the yellow cornmeal, all-purpose flour, baking powder, salt, and cayenne pepper. Stir until well blended.
- In a separate bowl, whisk together the buttermilk and egg until fully combined.
- Pour the wet mixture into the bowl with the dry ingredients. Add the chopped onion and stir until just combined.
- In a frying pan or deep skillet, heat the vegetable oil over medium-high heat. Drop a small spoonful of batter into the oil to check if it’s hot enough.
- Using a spoon or small ice cream scoop, drop spoonfuls of the batter into the hot oil. Fry for about 3-4 minutes on each side, or until golden brown.
- Remove the Hush Puppies from the oil using a slotted spoon and transfer them to a paper towel-lined plate to drain. Serve warm.
Notes
- For a nuttier flavor, substitute all-purpose flour with whole wheat flour.
- If you don’t have buttermilk, mix milk with vinegar and let it sit for 5 minutes.
- For a milder flavor, use smoked paprika instead of cayenne pepper.
