Instructions:
- Step 1: Preheat your oven to 350°F (175°C).
- Step 2: Line your loaf pan with parchment paper.
- Step 3: In a large bowl, mash the ripe bananas until mostly smooth.
- Step 4: Add the melted butter to the bananas, then mix in the egg, vanilla extract (if using), and sour cream.
- Step 5: In a separate bowl, whisk together the flour, baking soda, salt, and sugar.
- Step 6: Gradually fold the dry mixture into the wet mixture, being careful not to overmix.
- Step 7: Pour the batter into the prepared loaf pan, smoothing the top.
- Step 8: Bake for 60-65 minutes, or until a toothpick comes out clean.
- Step 9: Let cool in the pan for 10 minutes, then lift out and cool completely on a wire rack.
