Homemade Starbucks Egg White Bites (Sous Vide Method)

Ingredients
  

  • 8 large egg whites
  • 5 tablespoons cottage cheese
  • 1/4 cup Monterey Jack cheese, shredded
  • 1 tablespoon feta cheese
  • 1 tablespoon butter for greasing
  • 1 teaspoon cornstarch
  • 1 teaspoon red bell pepper, finely chopped
  • 2 dashes Tabasco or other hot sauce
  • 2 teaspoons green onion tops, chopped

Equipment

  • Sous vide immersion circulator
  • Small glass jars or silicone molds
  • Blender or whisk
  • Cooking thermometer
  • Large pot or container

Method
 

  1. Fill your large pot or container with water and attach your sous vide immersion circulator. Set the temperature to 172°F (78°C) and let it heat up.
  2. In a blender or mixing bowl, combine the egg whites, cottage cheese, Monterey Jack cheese, feta cheese, cornstarch, chopped red bell pepper, and hot sauce. Blend until smooth and creamy.
  3. Using the tablespoon of butter, grease your glass jars or silicone molds. This will help prevent sticking and make it easier to remove the egg bites once they are cooked.
  4. Pour the egg mixture evenly into the prepared jars or molds, leaving some space at the top for the egg bites to expand as they cook.
  5. Sprinkle the chopped green onion tops over the egg mixture in each jar or mold. This adds a fresh flavor and looks beautiful!
  6. Once the water bath has reached the desired temperature, carefully submerge the jars or molds into the water. Cook for 60 minutes. If you’re using silicone molds, you can cover them with foil to prevent water from getting in.
  7. After an hour, carefully remove the jars or molds from the water bath. Let them cool for a few minutes before removing the egg bites. If using glass jars, you can run a knife around the edges to help release them.
  8. Your Homemade Starbucks Egg White Bites (Sous Vide Method) are ready to be enjoyed! You can eat them warm or store them for later.
