Ingredients
  

  • 4 cups old-fashioned oats
  • 3/4 cup shredded coconut
  • 1/4 cup packed brown sugar
  • 2 tablespoons vegetable oil
  • 1/4 cup honey
  • 2 tablespoons pure maple syrup
  • 1 teaspoon ground cinnamon
  • 1 1/2 teaspoons vanilla extract
  • 1/2 cup raisins
  • 1/2 cup dried cranberries
  • 1/2 cup chopped almonds

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the old-fashioned oats, shredded coconut, brown sugar, and ground cinnamon. Mix well.
  3. In a separate bowl, whisk together the vegetable oil, honey, pure maple syrup, and vanilla extract.
  4. Pour the wet mixture over the dry ingredients and fold until well coated.
  5. Spread the granola mixture evenly onto a large, rimmed baking sheet.
  6. Bake for about 20-25 minutes, stirring halfway through.
  7. Once golden brown, let it cool slightly and then add raisins, dried cranberries, and chopped almonds.
  8. Allow to cool completely, then transfer to an airtight storage container.
  9. To assemble parfaits, layer granola with yogurt and fresh fruits of your choice.

Notes

  • For a nut-free option, substitute chopped almonds with sunflower or pumpkin seeds.
  • Use agave syrup for a vegan-friendly sweetener.
  • Granola can be frozen for up to three months.
