Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the old-fashioned oats, shredded coconut, brown sugar, and ground cinnamon. Mix well.
In a separate bowl, whisk together the vegetable oil, honey, pure maple syrup, and vanilla extract.
Pour the wet mixture over the dry ingredients and fold until well coated.
Spread the granola mixture evenly onto a large, rimmed baking sheet.
Bake for about 20-25 minutes, stirring halfway through.
Once golden brown, let it cool slightly and then add raisins, dried cranberries, and chopped almonds.
Allow to cool completely, then transfer to an airtight storage container.
To assemble parfaits, layer granola with yogurt and fresh fruits of your choice.
