- In a large mixing bowl, add the ground chicken, chopped raspberries, panko breadcrumbs, minced shallots, garlic, and all the fresh herbs. Sprinkle in the kosher salt and black pepper. Use your hands or a spatula to mix everything together until well combined. Be careful not to overmix!
- Once everything is mixed, take a handful of the mixture and form it into patties about 2 inches in diameter and 1/2 inch thick. You should be able to make around 8-10 patties, depending on your preferred size.
- In a large skillet, heat the olive oil over medium heat. Allow the oil to warm up for a minute or two.
- Carefully place the sausage patties in the skillet, making sure not to overcrowd the pan. Cook for about 4-5 minutes on each side or until they are golden brown and cooked through. The internal temperature should reach 165°F (74°C).
- Once cooked, transfer the patties to a plate lined with paper towels to absorb any excess oil. Serve warm with your favorite breakfast sides or in a sandwich.
Notes
- These patties freeze well; store in an airtight container for up to 3 months.
- If the patties are falling apart, add an extra egg or more breadcrumbs.
- For added flavor, marinate the ground chicken with spices before mixing.
