Ingredients
  

  • 2 pounds boneless skinless chicken breast cut into roughly 1-inch pieces
  • 2 large eggs
  • 2 tablespoons water to thin out the egg mixture
  • 2 cups breadcrumbs traditional or panko
  • 1/4 cup corn starch for crispiness
  • 2 teaspoons garlic powder for flavor
  • 2 teaspoons salt finely ground, pink Himalayan works well
  • 1 teaspoon ground black pepper for a bit of heat
  • 1 teaspoon onion powder enhances savory flavor
  • 1 teaspoon dried oregano adds earthy touch
  • 1 teaspoon smoked paprika for smokiness
  • Non-stick cooking spray to prevent sticking

Method
 

  1. Begin by cutting the chicken breasts into roughly 1-inch pieces.
  2. In a mixing bowl, whisk together the two large eggs and the water until well combined.
  3. In another bowl, mix together the breadcrumbs, corn starch, garlic powder, salt, black pepper, onion powder, oregano, and smoked paprika.
  4. Dip each piece of chicken into the egg mixture, then dredge it in the breadcrumb mixture.
  5. Place the coated chicken nuggets on a baking sheet lined with parchment paper or a wire rack.
  6. Preheat your oven to 400°F (200°C) or heat oil in a frying pan over medium heat.
  7. For baking, spray the nuggets lightly with non-stick cooking spray and bake for 15-20 minutes, turning halfway through.
  8. Once cooked, let the nuggets cool slightly and serve with your favorite dipping sauces.
