Ingredients
  

For the Cake:
  • 2.5 cups cake flour (or 2 1/4 cups all-purpose flour + 1/4 cup cornstarch)
  • 2 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 1.25 teaspoons salt
  • 1.75 cups granulated sugar
  • 0.75 cups unsalted butter (softened, 1 1/2 sticks)
  • 2 large eggs
  • 1 large egg white
  • 1.5 cups buttermilk
  • 1 tablespoon vanilla extract
For the Funfetti Frosting:
  • 1 cup unsalted butter (softened)
  • 4-5 cups powdered sugar
  • 0.25 cups heavy cream
  • 1 teaspoon vanilla extract
  • 0.25 cups rainbow sprinkles

Method
 

Instructions:
  1. Step 1: Preheat the Oven - Start by preheating your oven to 350°F (175°C). This ensures that your cake bakes evenly right from the start.
  2. Step 2: Prepare the Pans - Grease your 9-inch round cake pans with butter or non-stick spray. For extra assurance, line the bottoms with parchment paper and grease the paper as well.
  3. Step 3: Mix Dry Ingredients - In a medium bowl, whisk together the cake flour, baking powder, baking soda, and salt until well combined. This step is crucial for even distribution of the leavening agents.
  4. Step 4: Cream Butter and Sugar - In a large mixing bowl, beat the softened butter and granulated sugar together using a hand mixer or stand mixer until the mixture is light and fluffy. This usually takes about 3-4 minutes.
  5. Step 5: Add Eggs and Vanilla - Add the two large eggs and the egg white to the butter-sugar mixture, along with the vanilla extract. Beat until fully incorporated.
  6. Step 6: Alternate Adding Dry Ingredients and Buttermilk - Begin by adding half of the dry ingredient mixture to the wet ingredients, mixing on low speed. Then, pour in the buttermilk and mix until combined. Add the remaining dry ingredients and mix just until no flour streaks remain. Be careful not to overmix!
  7. Step 7: Bake the Cake - Divide the batter evenly between the prepared cake pans. Smooth the tops with a spatula and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Step 8: Cool - Once baked, remove the cakes from the oven and allow them to cool in the pans for 10 minutes. Then, carefully transfer the cakes to a wire rack to cool completely.
  9. Step 9: Frosting (Optional) - While your cakes cool, you can prepare the funfetti frosting or any frosting of your choice.
