Ingredients

For the Chicken:
  • 4 pieces chicken leg quarters legs with thighs attached
  • ½ cup Lee Kum Kee Hoisin Sauce the star of the dish
  • ½ cup barbecue sauce for that smoky, tangy kick
  • 2 tablespoons soy sauce enhances the umami flavor
  • 1 teaspoon garlic powder brings a savory aroma
  • 1 teaspoon ginger adds a warm, slightly spicy note
  • Salt and pepper to taste
  • Green onions for garnish

Equipment

  • Large mixing bowl
  • Baking dish
  • Measuring cups and spoons
  • Whisk or spoon
  • Sharp knife
  • Oven mitts

Method

Cooking Instructions:
  1. Preheat your oven to 375°F (190°C) to ensure even cooking.
  2. In a large mixing bowl, combine hoisin sauce, barbecue sauce, soy sauce, garlic powder, ginger, salt, and pepper. Whisk until thoroughly mixed.
  3. Add chicken leg quarters to the marinade, ensuring each piece is well-coated. Marinate for at least 30 minutes, or longer for best flavor.
  4. Transfer the marinated chicken to a baking dish in a single layer, pouring any leftover marinade over the top.
  5. Bake for about 45-50 minutes, or until the chicken reaches an internal temperature of 165°F (75°C). Baste halfway through for added moisture.
  6. Remove from the oven, let rest for a few minutes, and garnish with chopped green onions before serving.

Notes

  • For extra flavor, marinate chicken overnight.
  • Use a meat thermometer to avoid dry chicken.
  • Leftovers can be stored in an airtight container for up to 3 days.
