Ingredients
  

  • 1 stick unsalted butter softened
  • 1 cup coconut sugar or granulated sugar
  • 1/2 cup almond butter
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups white whole wheat flour or whole wheat pastry flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon maca powder (optional)
  • 1 1/2 cups dark or semi-sweet chocolate chips

Method
 

  1. Preheat your oven to 350°F (175°C) to ensure even baking.
  2. Line a 9x13 inch baking pan with parchment paper or grease it lightly with cooking spray.
  3. In a large mixing bowl, combine the softened unsalted butter and coconut or granulated sugar. Beat until light and fluffy.
  4. Add almond butter, eggs, and vanilla extract, mixing until fully combined.
  5. In a separate bowl, whisk together the flour, baking soda, salt, and maca powder (if using). Gradually add to the wet ingredients and mix until just combined.
  6. Fold in the chocolate chips until evenly distributed.
  7. Pour the batter into the prepared baking pan and spread it evenly. Bake for 20-25 minutes or until golden brown and a toothpick comes out clean.
  8. Allow to cool in the pan for 10 minutes before transferring to a wire rack. Once cool, slice into squares or rectangles and enjoy!

Notes

  • For nut allergies, substitute almond butter with sunflower seed butter.
  • Use maple syrup or honey for a different sweetness profile.
  • Store in an airtight container for up to one week at room temperature.
