Ingredients
  

For the Pancakes:
  • 1 1/2 cups rolled oats Gluten-free if needed for dietary preferences.
  • 1 large banana Make sure it’s overripe for maximum sweetness.
  • 1 cup milk Plus 2 tablespoons, unsweetened almond milk works beautifully.

  • Mixing bowl
  • Non-stick Skillet or Griddle

Method
 

Instructions:
  1. Blend the rolled oats in your blender until they reach a fine flour-like consistency.
  2. In a mixing bowl, add the blended oats, mashed overripe banana, and milk. Mix until you have a smooth batter.
  3. Heat your non-stick skillet or griddle over medium heat, lightly greasing if needed.
  4. Pour about 1/4 cup of batter for each pancake onto the skillet.
  5. Cook for about 2-3 minutes until bubbles form on the surface. Then flip and cook for an additional 1-2 minutes until golden brown.
  6. Serve immediately with your favorite toppings such as fresh fruit, yogurt, or maple syrup.

Notes

  • Ensure the skillet is properly heated and lightly greased to prevent sticking.
  • If the batter is too thick, add a splash more milk; if too thin, add more oat flour.
  • Store leftover pancakes in an airtight container in the refrigerator for up to 3 days.
