Ingredients

  • 1/2 cup berries of choice (frozen and thawed with liquid, preferred)
  • 1 tablespoon cocoa powder (heaping)
  • 2 tablespoons ground flax seed
  • 1 tablespoon nut butter
  • 1 tablespoon extra-virgin olive oil
  • 1 large ripe banana
  • 2/3 cup plain, unsweetened Greek yogurt
  • 1/4 cup diced or chopped nuts

Equipment

  • Mixing bowl
  • Fork or whisk
  • Measuring cups and spoons
  • Serving bowl
  • Knife and cutting board

Method

  1. Start by thawing your frozen berries. You can do this by leaving them out at room temperature for about 30 minutes or quickly warming them in the microwave for a few seconds. Make sure to reserve the liquid that forms as they thaw.
  2. In a mixing bowl, combine the thawed berries along with their liquid, heaping tablespoon of cocoa powder, ground flax seed, nut butter, and extra-virgin olive oil. Use a fork or whisk to blend everything until smooth.
  3. Slice the ripe banana into thin pieces. Fold the banana slices into the chocolate mixture, ensuring they are well dispersed throughout.
  4. In a separate bowl, spoon out the Greek yogurt. Gently swirl in the chocolate mixture, creating a marbled effect.
  5. Transfer the chocolate yogurt mixture into your serving bowl. Sprinkle the diced or chopped nuts over the top for added crunch and texture.
  6. Your Healthy Chocolate Breakfast Sundae is now ready to be enjoyed! Feel free to add any additional toppings like extra berries, a drizzle of honey, or even a sprinkle of cinnamon for an extra flavor boost.

Notes

  • Use fresh berries and ripe bananas for maximum flavor.
  • If you have leftovers, store them in an airtight container in the refrigerator for up to two days.
  • You can prepare the chocolate mixture the night before for a quick breakfast in the morning.
