Method
 

  1. Start by preheating your oven to 350°F (175°C). Line your baking sheet with parchment paper to make cleanup easier.
  2. In a mixing bowl, use a fork or potato masher to mash the ripe bananas until smooth. You'll need about 1 cup of mashed bananas.
  3. In a food processor, blend the whole pitted dried dates until they form a paste. If your dates are too firm, soak them in warm water for a few minutes to soften them before blending.
  4. In a large mixing bowl, combine the mashed bananas, date paste, unsweetened applesauce, cinnamon, and vanilla extract. Mix well until all ingredients are fully incorporated.
  5. Stir in the rolled oats. If the mixture seems too wet, add more oats gradually until you reach a cookie dough consistency.
  6. Using a spoon or cookie scoop, drop spoonfuls of the cookie dough onto the prepared baking sheet. Flatten them slightly with the back of the spoon.
  7. Bake in the preheated oven for 15-20 minutes or until the cookies are golden brown and set.
  8. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Enjoy your Healthy Breakfast Cookies warm or store them for later!
